It’s that time of the year when packing that lunch box at the crack o’ dawn is at top of my mind. To help our neighbors at Cantera apartments in El Paso<\/a> have an easier start to this busy season, we clicked into our favorite site “Taste of Home<\/a>” to find some of the healthiest and easiest lunches that we think you kids will love. And you will, too!<\/span><\/span><\/span><\/span><\/p>\n

Peanut Butter, Apple and Raisin Sandwich<\/span><\/a><\/span><\/span><\/b><\/span><\/span><\/p>\n

Taste of Home’s Top Review:<\/span><\/span><\/b> Love the combination of texture and flavor. It’s an easy way to make a healthy, tasty treat.<\/i><\/span><\/span><\/span><\/span><\/p>\n

Ingredients:<\/span><\/span><\/b><\/span><\/span><\/p>\n

• 1 tablespoon creamy or chunky peanut butter<\/span><\/span><\/span><\/span><\/span><\/li>\n
• 1 slice crusty white or wheat bread<\/span><\/span><\/span><\/span><\/span><\/li>\n
• 1\/4 medium apple, thinly sliced<\/span><\/span><\/span><\/span><\/span><\/li>\n
• 1 tablespoon golden raisins<\/span><\/span><\/span><\/span><\/span><\/li>\n
• Ground cinnamon<\/span><\/span><\/span><\/span><\/span><\/li>\n<\/ul>\n

  Directions: <\/span><\/span><\/b>Spread peanut butter over bread. Top with apple and raisins; sprinkle with cinnamon. <\/span><\/span><\/span><\/span><\/p>\n

  Fruity Peanut Butter Pitas<\/span><\/a><\/span><\/span><\/b><\/span><\/span><\/p>\n

  • 1\/4 cup peanut butter<\/span><\/span><\/span><\/span><\/span><\/li>\n
  • 1\/8 teaspoon each ground allspice, cinnamon and nutmeg<\/span><\/span><\/span><\/span><\/span><\/li>\n
  • 2 whole wheat pita pocket halves<\/span><\/span><\/span><\/span><\/span><\/li>\n
  • 1\/2 medium apple, thinly sliced<\/span><\/span><\/span><\/span><\/span><\/li>\n
  • 1 firm banana<\/span><\/span><\/span><\/span><\/span><\/li>\n<\/ul>\n
    Directions:<\/span><\/span><\/b><\/span><\/span><\/div>\n

    In a small bowl, blend the peanut butter, allspice, cinnamon and nutmeg. Spread inside pita bread halves and fill with apple and banana slices. <\/span><\/span><\/span><\/span><\/p>\n

    Spinach and Turkey Pinwheels<\/span><\/a><\/span><\/span><\/b><\/span><\/span><\/p>\n

    Taste of Home’s Top Review:<\/span><\/span><\/b> My kids love these easy four-ingredient turkey pinwheels. Go ahead and make them the day before, they won’t get soggy! <\/span><\/span><\/i><\/span><\/span><\/p>\n

    • I carton (8 oz) spreadable garden vegetable cream cheese<\/span><\/span><\/span><\/span><\/li>\n
    • 8 (8 inch) flour tortillas<\/span><\/span><\/span><\/span><\/li>\n
    • 4 cups fresh baby spinach<\/span><\/span><\/span><\/span><\/li>\n
    • 1 pound thinly sliced deli turkey<\/span><\/span><\/span><\/span><\/li>\n<\/ul>\n

      Directions:<\/span><\/span><\/b><\/span><\/span><\/p>\n

      Spread cream cheese over tortillas. Layer with spinach and turkey. Roll up tightly. If not serving immediately, cover and refrigerate. To serve, cut each roll crosswise into 6 pieces.<\/span><\/span><\/span><\/span><\/p>\n

      • 1 cup shredded lettuce<\/span><\/span><\/span><\/span><\/span><\/li>\n
      • 1 cup shredded cheddar cheese<\/span><\/span><\/span><\/span><\/span><\/li>\n
      • 1\/3 cup ranch salad dressing <\/span><\/span><\/span><\/span><\/span><\/li>\n<\/ul>\n

          Arrange pepperoni in the center of each tortilla. Top with remaining ingredients. Fold sides and bottom over filling and roll up. <\/p>\n

          • 1 small sweet red pepper, julienned<\/span><\/span><\/span><\/span><\/span><\/li>\n
          • 1\/2 cup thinly sliced green onions<\/span><\/span><\/span><\/span><\/span><\/li>\n
          • 1 cup mayonnaise<\/span><\/span><\/span><\/span><\/span><\/li>\n
          • 1\/2 cup picante sauce<\/span><\/span><\/span><\/span><\/span><\/li>\n
          • 1 teaspoon salt<\/span><\/span><\/span><\/span><\/span><\/li>\n
          • 1 teaspoon ground cumin<\/span><\/span><\/span><\/span><\/span><\/li>\n
          • Cook pasta according to package directions; drain and rinse in cold water. In a large bowl, combine the pasta, beans, cheese, tomatoes, peppers and onions.<\/span><\/span><\/span><\/span><\/span><\/li>\n<\/ul>\n

            Directions:<\/span><\/span><\/span><\/b> In a small bowl, combine the mayonnaise, picante sauce, salt and cumin; pour over salad and toss to coat. Cover and refrigerate for 2 hours before serving. Place it in a container with a fork or spoon and send your kids on their way! <\/span><\/span><\/span><\/span>
