With fall in full swing, our family at Cantera Apartments in El Paso is spending lots of time in the kitchen preparing some of our favorite fall recipes. We think they are so tasty that we’ve chosen our second blog of the month to share them with you.

Make it YUMMY … all season-long!
Squash Soup with Curried Brown Butter Recipe
Ingredients:
• 3 slices bacon, diced
• 1 sweet onion, diced
• 4 garlic cloves, minced
• kosher salt and pepper
• 4 to 5 cups cubed butternut squash
• 4 cups stock chicken or vegetable stock
• ½ cup heavy cream or full-fat coconut milk
• creme fraiche or plain yogurt, for topping
• chopped fresh cilantro, for topping
Curried Brown Butter:
• 4 tablespoons unsalted butter
• 1 teaspoon curry powder

Roasted Vegetables
Ingredients
• 2 cups cubed butternut squash
• 2 cups halved Brussels sprouts
• 2 cups cauliflower florets
• 2 carrots, cut into 1-inch pieces
• 1 to 2 turnips, cut into 1-inch pieces
• 1 small red onion, cut into wedges
• 1 cup halved red radishes or cubed daikon radish
• Extra-virgin olive oil, for drizzling
• Sea salt and freshly ground black pepper
• 2 tablespoons chopped rosemary or 12 chopped sage leaves, optional
• Apple Cider Vinegar Dressing, optional
• Lemon wedges, for serving, optional

Chocolate Chip Zucchini Bread

Ingredients
• 3 cups grated fresh zucchini, about 3-4 medium zucchini
• 1 ½ cup granulated sugar
• 2 large eggs
• 2 teaspoons vanilla extract
• 1/4 teaspoon kosher salt
• 3/4 cup butter melted¹
• 3 cups all-purpose flour² properly measured
• 2 teaspoons baking soda
• 1 teaspoon ground cinnamon

As we continue to enjoy our spectacular fall weather from our apartment community in El Paso, we like to eat outdoors as often as possible. To get you out and about to do the same, we have asked our staff at Cantera apartments for rent in El Paso for their top picks for where to do to eat outdoors in Austin. We must admit, the list was overwhelming. So, we took a vote and paired it down to the following options that we are sure you will enjoy.
Boasting “creative food with a healthy twist, The Kitchen is overloaded with top testimonials about what a super place this is to eat supper outside. And we must concur.
It is by far our favorite spot for Sunday Brunch out on the patio. We also like the fact that they source their food from local growers to help support the El Paso economy.
Their Huevos Rancheros are perfect to fill the void and if you are seeking something fresh and filling, be sure to order the Aloha Pancakes – “served with Chantilly cream, pineapple rum sauce and topped with strawberry, pineapple and toasted coconut.”
If you head there for dinner, the Bourbon Firecracker Burger is a must for those who like things on the spicier side. Think: Jalapenos, bourbon glaze bacon, onion strings, garlic aioli … all on a brioche bun. Yum!
Featuring “Bistro classics that deliver delicious and sophisticated flavors,” Magic Bistro in El Paso makes good on its promise. Every dish is freshly prepared with a menu that overflows with homemade sauces and dressings complementing their impressive and flexible menu items for vegetarians, vegans, or those seeking dairy-free or gluten-free options. For meat lovers, you will appreciate all the effort they go to for you to offer in-house freshly smoked ribs!
If you are just seeking a spot for dessert, look no further. All the baked goods are prepared right on site and served fresh out of the oven. Key Lime Pie anyone? How above a super serving of their Double Chocolate Cake? Or our favorite: The Cajeta Flan Cakes prepared with caramelized flan “banked into a moist cake with Cajeta drizzle and a choice of vanilla cake or Black Russian coffee cake.”
An absolutely love spot to dine outside, Thyme Matters offers the ideal spot for al fresco dining in El Paso. With misters to manage the hotter days and heaters ready for the cooler months, the owners go out of their way to ensure our dinner outside is not only comfortable, yet they offer a menu complete with creative options from which to choose.
We like to start with an appetizer or two and suggest you might enjoy the Calamari Fritti served with a spicy orange sauce and lime. Or if you are a fan of Mussels, this dish overflows with flavor within its white wine sauce, homemade marinara sauce, garlic, and fresh tomatoes.
For dinner, we are big fans of the Beef Tenderloin and signature Linguine alle Vongole.
No matter what you choose, you will not be disappointed.

With the fall season right around the corner, smart travelers are already looking for good deals and great tips on how to enjoy their holiday travel this year. Be it Thanksgiving, Christmas, or events in-between, traveling can be a challenge to say the least.
To help you stay ahead of the (stress) curve, we decided to use our blogs this month on some tips that we have found online that will hopefully make your travels to and from our apartment community in El Paso, Texas, this Thanksgiving (and other holidays) a lot more enjoyable this year.
We’ll send along our thanks to the Travel Channel who has enlightened us with the following tips.
Safe travels!
Plan Ahead
It's never too early to start your holiday travel planning. In the early fall, you can take advantage of lower rates and seats aplenty. To jump on a bargain, sign up for sale notifications from your preferred airlines or Amtrak and follow your favorites on Twitter and Facebook where special sale notifications may pop up before they are available to the general public.
Travel Light
As more airlines start charging for checked bags, it's a good idea to pack light and carry on your bag. But keep in mind that your fellow travelers will all have the same idea and overhead space may be tight onboard. To lighten your traveling load, consider shipping some of your belongings to your final destination ahead of time, especially presents and bulky items like diapers or extra clothes that you won't need for the journey.
Choose the Best Days
The day before Thanksgiving is the busiest travel day of the year closely followed by the Sunday after the big day when travelers tear themselves away from the leftovers and football to make the journey home. Christmas has a similar pattern.
Avoid these days by flying out on Monday or Tuesday if the holiday schedule makes sense. When you're ready to head home, take flight on Friday when the masses have moved on from the airports to the shopping centers to score the best holiday deals. The crowds pick up again on Saturday, reaching a critical peak on Sunday, before leveling out on Monday.
High-Tech Troubleshooting
It's commonsense to arrive at the airport early — you'll need the time for parking, security and to wait your turn for that necessary cup of coffee. But you can avoid some airport hassles by taking advantage of useful applications that can be used on your smart phone. iPhone users can get the skinny on the airport, including maps showing the gates and restaurant information, using the GateGuru app. Airlines including Southwest, Delta and American Airlines all have mobile websites where passengers can check in, confirm seats and keep track of their flight status. Plan your route ahead of time and travel with a GPS system, smart phone or old-school maps to offer alternatives if you need a Plan B.
Holiday Road
While you certainly save money and avoid some headaches traveling by land, navigating the highways presents its own set of holiday challenges during the extended Thanksgiving holiday weekend. Traffic can choke heavily traveled routes adding hours to generally speedy trips. Follow the same best practices for road travel, including avoiding the highways on the Wednesday before turkey day and the following Sunday.
Plan your route ahead of time and travel with a GPS system, smart phone or old-school maps to offer alternatives if you need a Plan B. And to avoid unnecessary delays, bring along an E-ZPass or change for the tolls, as well as plenty of snacks, and be sure to fill up on gas before you hit the road.
Unplug. Unwind. Have fun.
Although traveling during the holidays has its challenges, when all is said and done it give us all a chance to really unplug, unwind, and spend good times with family and friends.
