Best Mardi Gras Meal Ideas – Any Day of the Year

We love to cook!  So much so that we thought this Blog would be the perfect spot to share some of our favorite Cajun recipes from TasteofHome.com that are ideal for this festive time of the year.  Bring on the beads, dress as colorfully as you want to, and let your own good times roll!
King Cake – Of Course!

Ingredients:
•    2 packages (1/4 ounce each) of active dry yeast
•    1/2 cup warm water (110° to 115°)
•    3/4 cup sugar, divided
•    1/2 cup butter, softened
•    1/2 cup warm 2% milk (110° to 115°)
•    2 large egg yolks, room temperature
•    1-1/4 teaspoons salt
•    1 teaspoon grated lemon zest
•    1/4 teaspoon ground nutmeg
•    3-1/4 to 3-3/4 cups all-purpose flour
•    1 teaspoon ground cinnamon
•    1 large egg, beaten

Glaze

•    1-1/2 cups confectioners' sugar
•    2 teaspoons lemon juice
•    2 to 3 tablespoons water
•    Green, purple and yellow sugars

Directions

In a large bowl, dissolve yeast in warm water. Add 1/2 cup sugar, butter, milk, egg yolks, salt, lemon zest, nutmeg and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky).

Turn out onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.

Punch dough down. Turn onto a lightly floured surface. Roll into a 16×10-in. rectangle. Combine cinnamon and remaining sugar; sprinkle over dough to within 1/2 in. of edges. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Place seam side down on a greased baking sheet; pinch ends together to form a ring. Cover and let rise until doubled, about 1 hour. Brush with egg.

Bake at 375° for 25-30 minutes or until golden brown. Cool completely on a wire rack. For the glaze, combine the confectioners' sugar, lemon juice and enough water to achieve the desired consistency. Spread over cake. Sprinkle with colored sugars.

PS. If you want to hide a token plastic little baby inside, do so by cutting a small slit in the bottom of the baked cake – and be sure to tell your guests.  Have a small prize ready for the winner!

So we thought we’d stop right here to explain this tradition and dive into Better Homes & Gardens to get the story about this tradition.
Here’s a short version:
Mardi Gras (a.k.a., Fat Tuesday) falls each year on the Tuesday before Ash Wednesday at the start of Lent. Traditionally, as part of that celebratory carnival, colorful king cakes are served at parties and gatherings. King cakes, either purchased or homemade, also tend to contain one customary ingredient—a tiny plastic king cake baby.
The tradition dates back hundreds of years—and there’s an interesting story behind how the king cake baby made its way into the pastry. The practice of making and serving king cakes actually dates back to the origins of Mardi Gras itself, which was first celebrated in America in 1699. Baking a baby into the cake wasn’t common practice until the 1800s.
So, before you put on your beads or fire up that delicious batch of gumbo, arm yourself with the details about why there may be a small baby in your slice of cake—and what it means if you’re the one who finds it. Hint: It’s good luck!”

(Super) Easy Jambalaya

Ingredients
•    1 package (8 ounces) jambalaya mix
•    1 package (14 ounces) hot smoked sausage, cut into 1/2-inch slices
•    1 cup uncooked shrimp (16-20 per pound), peeled and de-veined, cut into 3/4-inch pieces
•    3 green onions, thinly sliced
•    1/2 cup shredded cheddar cheese
•    1/2 cup pico de gallo

Directions:

Prepare jambalaya mix according to package directions, adding sausage and shrimp during the last 5 minutes of cooking. Remove from the heat. Stir in cheese, pico de gallo and green onions; heat through.

Delicious Cajun Peach Catfish

Ingredients:

•    2 tablespoons olive oil
•    2 teaspoons lemon juice
•    1 teaspoon Cajun seasoning
•    1/2 teaspoon dried thyme
•    1/3 cup finely chopped pecans
•    2 tablespoons grated Parmesan cheese
•    1 tablespoon dry bread crumbs
•    1 tablespoon dried parsley flakes
•    4 catfish fillets (6 ounces each)

Directions:

Preheat oven to 425°. In a small bowl, combine oil, lemon juice, Cajun seasoning and thyme. In another bowl, combine pecans, cheese, breadcrumbs, parsley and 1 tablespoon of the oil mixture.

Earlier this month we started to list all the reasons why El Paso is such a perfect place to play and call home. The list is so long that we are continuing to share our insight now.
It’s a Hop Skip and Jump to Get Here and Go Anywhere
The El Paso International Airport offers an impressive list of non-stops to some of America’s most popular destinations and easy connections throughout the big state of Texas. Depending on where your friends and family live outside of El Paso, they can fly from one coast or the other via Delta, American Airlines, United and other international carriers. And thanks to our central location, either way to fly is probably four hours in the air at the max. 
Crazy for Culture?   
There is so much history to our hometown, you could spend months learning about our region’s rich heritage and customs; all of which are embraced and celebrated by the diverse mix of Native American, Mexican, and American residents and cultures. To immediately get immersed in the charm of our territory, you will want to spend some quality time at the San Elizario Historic District, the El Paso Museum of History and many more of the cultural centers that document our historically rich history that dates back to the 18th Century.      
And How About Our Cuisine …
Just one look at the eclectic choice of restaurants that you can find throughout the city and beyond, and you can rest assured you are in for a tantalizing treat day after day. We are so fortunate to have such a diverse and culturally rich collection of award-winning chefs who call El Paso home.  Pair that with the generational recipes that appear as specials throughout the season, and there really is no reason to cook at home!  
Root for Rhinos, Chihuahuas and Locomotives
As home to three professional sports teams, there is no shortage of sporting events.  In the spring, it’s all about baseball and rooting for the El Paso Chihuahuas, which are the Triple-A affiliate of the San Diego Padres.  Their first home game is March 31 and tickets can be purchased through their website.
Soccer fans purchasing their tickets for the season to support the El Paso Locomotive.  Their opening day is March 11, where they will take on the Sacramento Republic. Both teams are part of the United Soccer League.
Right now, all eyes are on the El Paso Rhinos, who are deep into mid-season with their hockey schedule.  And if that’s not enough sports action, tune into the year-round sports competitions of our University and your hometown schools as well.

It’s a sight to be seen by all with over 400,000 (yes, that many!) mini-lights, super-sized decorations and winter themed attractions for all to enjoy.  Make a day of it, or go back for more, for a family skate around the rink or saunter through the seasonal trees and displays.  The City of El Paso and partners strive to make the season bigger and better for El Pasoans and visitors to enjoy. 

Sounds of the Holidays

Thanks to all the effort of the El Paso Symphony Orchestra, this year’s show is just as magnificent as the past. Included in the performance are musical arrangements and songs under the direction of Conductor Bohuslav Rattay.  It’s an evening of holiday entertainment featuring Barbara Padilla (America’s Got Talent 1st Runner up) and the Youth Opera of El Paso.  On the set-list are the favorites: Oh holy night, Silent night, Do you hear what I hear and more.

Join “Opening Notes” with Nathan Black, EPSYO General Manager, 6:30pm Philanthropy Theatre prior to each classical concert for insights on the evening’s program.

Arts in the Parks: Holiday Ornaments and Cards
December 3, 2022
Make your tree and Mother Nature happy by creating your own ornaments and holiday cards at the Visitors Center at Tom Mays Park. No reservation is necessary yet if you have questions, call 915 444-9100.  It’s only $5 for adults 13 years old and up; free for Texas State Park Pass holders and children between the ages of 5-12 years old.

Continue your creativity at the El Paso Museum of Art (One Ars Festival Plaza) from noon to 4:00 pm.  All are welcome to make your very first Snow Globe to take home to appreciate for years to come.

Earlier this month we provided you with lots of fun and festive ways to get into the mood of the holidays – and Thanksgiving in particular. To keep the theme moving through the rest of the month, here are more ways to enjoy your family and friends today and through your Thanksgiving feast!

Play Hide the Pumpkin
No matter what the weather, this game can be played indoors and out.  You only need a dozen (or more) of those cute little pumpkins and gourds and hide them like it’s Easter!  The easy part follows – let the kids keep the pumpkins to color as a decoration for the table on Thanksgiving Day. Or better yet, use them as name place cards for your guests.

Tik-Tok & In-laws
Got company in town or coming your way?  This is a perfect time for the kids to make their own documentary about their friends and family.  Think:  video for TikTok!  They will be amazed to hear what their Grandma and Grampa’s Thanksgiving memories are, and the interview will be something to treasure for years to come. 

Stroll Down Memory Lane
Once the videos are done, find some time to look through the family scrap books with your family.  If they are not marked with names or details, now is a wonderful time to chart the past so as not to lose the history of your ancestors. Families to follow will appreciate the time and talent that they will treasure and pass on for years to come. 

Create a Gratitude Vase or Bowl 
Everyday is a day to be thankful for what we have in life, yet it is during the month of November when the idea is more vivid than others.  Throughout the month, select one day a week (maybe Sunday) and have the family (and your friends if you so desire) write down their thoughts on Autumn colored paper and place their words of ‘thanks’ in a clear vase or bowl. During dessert on Thanksgiving, pass the bowl or vase around the table and read them out loud.

Bring Out The Board Games   
When is the last time you played Bingo? How about Monopoly or a good old fashion round of Go Fish or Yahtzee!  If you don’t have games at home, hit the local thrift shops as they usually overflow with options to get the gang together this holiday season.
  
Put on a Parade – or Turkey Trot
Who needs the 4th of July when you can organize a costume parade or Turkey Trot right here at Cantera! We’ll help you spread the word to get the goblins, ghosts and dressed up pups out of the house and onto the paths around our community.  
  
Thank a Soldier
There’s a program called Operation Gratitude that welcomes letters from all ages thanking our soldiers for their service.  From personal cards to hand-drawn colorful pictures of pumpkins and turkeys, any and all messages will be delivered to bring a little joy into the lives who deserve our thanks most.
